I had a photo shoot late this afternoon, so I picked up a pizza on the way home, rather than attempt to start dinner at 6PM. Kurt and Sarah Beth had gotten ambitious while I was gone and made macaroons from the coconut I had sweetened yesterday.
To sweeten coconut yourself, you boil it with water and sugar and let it simmer until the liquid runs out, then let it dry. A long process, but boy does our house smell delicious. I had sweetened it to make coconut chicken later this week, but the macaroons were a good call and went perfectly with the large glass (or two) of wine I poured myself.
